Ingredients
1/4 cup fresh or frozen strawberries ( approx 4 large strawberries)
1/4 cup quick-cook oats
2 tablespoons chia seeds
1/2 cup milk of choice
1 tablespoon ground almonds
1 tablespoon vanilla or plain protein or collagen powder
1-2 teaspoons honey
Squirt of fresh lemon juice
If using plain protein powder or collagen, a small splash of vanilla extract can help create the same effect.
Optional toppings
Yogurt
Chopped almonds
Fresh strawberries
Method
Mix all the ingredients together in a bowl or jar.
Cover and refrigerate overnight.
Stir before serving.
Add another splash of milk if needed.
Top with yogurt, sliced banana, and fresh strawberries.
Eat cold on the go, or heat in pot for 2 mins at a medium heat, or 30 seconds in a microwave.
You can use dairy milk, almond milk, oat milk, soy milk, or any milk you enjoy. If you want a higher-protein version, dairy milk or soy milk can work especially well. If you prefer a softer, more dessert-like texture, use a creamier milk.
Oats provide carbohydrates for energy, along with fiber and B vitamins. Chia seeds add fiber, healthy fats, and plant-based omega-3s. Strawberries bring vitamin C and a fresh, fruity flavour. Milk, protein powder, collagen, yogurt, or soy milk can help raise the protein content.
