Broccoli Bread (Savoury, Nourishing & Gluten-Optional Friendly)

Ingredients

  • 1 cup organic flour (or GF if preferred)

  • 1 tsp baking powder

  • 1 head broccoli, finely grated

  • ⅓ cup grated Parmesan cheese

  • 3 eggs, beaten

  • Tablespoon of olive oil

  • 1 clove garlic, minced

  • Salt & pepper, to taste

  • Pumpkin seeds (for topping)

Method

  1. Preheat oven to 180°C (350°F).

  2. Line a loaf tin with baking paper.

  3. In a large bowl, combine flour, baking powder, salt, and pepper.

  4. Add grated broccoli, Parmesan, garlic, and beaten eggs. Mix until well combined.

  5. Pour mixture into the loaf tin and sprinkle pumpkin seeds on top.

  6. Bake for ~30 minutes, or until a knife inserted comes out clean.

  7. Allow to cool slightly before slicing.

Best served warm with butter, alongside soup, or enjoyed on its own.
