Watercress Pesto


1 bunch aprox 150grams of watercress

3/4 cup of raw cashew nuts

2 tablespoons of olive oil

Juice of 1 small lemon

1 teaspoon of Savoury yeast

1 clove of garlic

Mineral salt


Watercress is nutrient dense superfood. It is high in vitamins A and C and is especially high vitamin K. Watercress is also high in calcium and many antioxidants which help to protect the heart from many diseases.


This recipe is super simple, add all ingredients to a blender and blend to you get the desired texture.

Add salt and pepper to taste.

Serving suggestions

You can add this pesto to many meals including pasta dishes. Have as a snack on crackers with tomato and cheese. Try spreading pesto on a pizza base and top with parmesan cheese.
