This recipe is gluten free, dairy free, and refined sugar free. It’s super easy, high in protein and fiber.
2 ripe bananas
2 tablespoons of corn flour
1 teaspoon of baking powder
1 tablespoon of coconut oil for cooking
Blend until smooth in a blender.
Alternatively you could mash the bananas with a fork and beat the eggs, add all ingredients together and mix well.
Turn a frying pan on to a medium heat and add coconut oil, let it melt and distribute evenly.
Table spoon the blended mixture on to the hot pan, cook until bubbles start appearing and flip making sure both sides are cooked through.
Top pikelets with -unsweetened probiotic yoghurt and berries,
or -coconut oil and maple syrup.
Serves 2-3 people, this recipe is easy to double if needed. These as an excellent morning/afternoon tea for kids, or a balanced breakfast for adult.
